This week's recipe comes from NutriSystem member Naomi, who says, "I had to share this. I saw a commercial for a restaurant showing cinnamon stacks, and thought I could try it with NutriSystem foods. It's excellent! I had fresh strawberries on it and found it very filling. Plus, it satisfied my urge for a cinnamon roll!"
Ingredients
- 1 package NutriSystem Pancake Mix
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 oz. fat-free cream cheese
- Dash of cinnamon
- 1/4 tsp. vanilla
- 1-2 packets Splenda®
- 1-2 drops skim milk
- 1-2 Tbsp. fat-free Cool Whip
- 1 1/4 cup fresh strawberries
- Prepare NutriSystem Pancake Mix as directed, but add 1 tsp. vanilla and 1 tsp. cinnamon; make 3 pancakes.
- Blend softened cream cheese, add a dash of cinnamon, 1/4 tsp. vanilla, Splenda, and just a drop or two of skim milk to thin it a little more.
- Spread mixture on each pancake, stack them, and then top with fat-free COOL WHIP. Sprinkle with cinnamon and strawberries (optional).
